A very satisfactory millennium vintage in Chablis with many growers producing their best wines since the stunning 1995 and 1996 vintages. Weather conditions were very beneficial to growers with a temperate spring and early summer, which saw no frost nor hail (perennial hazards in Chablis). July was however unseasonably wet yet the hot and dry August ensured that the Chardonnay grapes ripened fully. Harvesting commenced around the third week in September.
The wines are ripe and also display very good acidity levels. Comparisons between this vintage and the 1995 wines are being made, as the 2000 wines appear to have greater concentration than the three previous vintages. The village wines are approachable now while the premiers and grands crus will require another few years of bottle ageing before they should be broached.
