Assyrtiko is used for both dry and sweet white wine and grows mainly on the islands of Santorini, Paros, Amorghos and Naxos. Small quantities can be found in Attica, Boeotia, Drama, Epanomi, Evia, Fthiotida, Halkidiki and Hromitsa. Aromas of minerals, citrus fruit and honey can be found in the deliciously concentrated dry wines of Santorini, while the luscious sweet Vinsantos show characteristics of having a deep amber colour, a nose of raisins and a palate of dates and dried figs.
